This tropical fruit cheong preserve blends the tart flavor of passion fruit with the sweet juiciness of pineapple. It’s a vibrant and refreshing mix that turns into a perfect summer drink when served with sparkling water and ice. Letting it ferment slightly deepens the flavor and enhances its complexity.

Ingredients:
- 1 liter jar
- 1 kilogram passion fruit
- 1 kilogram peeled and chopped pineapple
- 1 kilogram sugar
Instructions:

Wash the passion fruit thoroughly under running water and pat dry. Cut each fruit in half and scoop out the pulp with a spoon into a bowl.

Dice the pineapple into bite-sized cubes and mix it with the passion fruit pulp.
(Optional: Add mango for extra flavor.)

Add the sugar to the fruit mixture and stir well to combine.
(Use between 70 to 100 percent of the fruit weight in sugar — more sugar extends the shelf life.) Leave the mixture at room temperature, stirring occasionally to help the sugar dissolve.

Once the sugar is completely dissolved, transfer the mixture to a sterilized glass jar.
Enjoy with sparkling water and ice as a refreshing fruit aid. (You can drink it right away, but refrigerating for 3 to 4 days enhances the flavor.)
Storage guidelines
Once opened, store in the refrigerator and consume within one week. Unopened jars can be stored in the refrigerator for up to three weeks.
